Liquid ingredients

  • 750 g Yogurt (3,5 %)
  • 75 g Water
  • 30 g Lime juice

Dry ingredients

Optional

  • 20 g Glycerin * (when stored in the freezer)

Instructions
 

Preparing the ice cream mixture

  • Place the water, cane sugar and vanilla sugar together in a pan and heat while stirring until the sugar has completely dissolved. Then remove from the heat.
    75 g water, 75 g cane sugar, 30 g vanilla sugar
  • Mix the yogurt with the sugar syrup and lime juice well. The best way to do this is with a hand mixer.
    750 g yogurt, 30 g lime juice

Freezing process

  • Switch on the ice cream maker and leave it to cool for a few minutes.
  • Freeze the frozen yogurt ice cream in the ice cream maker.
  • Optional: Just before the ice cream is ready, add the glycerine.

Notes

Alternatively, you can also make the ice cream without ice cream maker in the freezer perform (total time about 4 hours).
As yogurt ice cream becomes relatively solid in the freezer due to its high fat content and we don't use any of our other helpers here, the ice cream should be consumed immediately after making. Otherwise, you should use glycerine to keep the ice cream soft in the freezer.
